Roasted Balsamic Tomatoes with Goat Cheese & Basil



Ingredients:

        • 1 package of small (e.g. Campari) tomatoes, halved
        • 1 tbsp olive oil
        • 2 tbsp good balsamic
        • 1 tbsp sugar
        • Salt & pepper
        • 1/4 cup goat cheese crumbles
        • 2 tbsp chopped fresh basil 

Instructions:

Pre-heat oven to 350 degrees.  Remove seeds from tomato halves with a small spoon.  Lay tomatoes cut-side-up in a small roasting pan.  Drizzle with olive oil and balsamic, and sprinkle with sugar, salt and pepper.  Roast tomatoes for 25-30 minutes.  Transfer roasted tomatoes to a plate and sprinkle with goat cheese and basil.
